  1. Preheat oven to 350ºF
  2. In a large bowl, mix oats, flour, protein powder, baking powder, cinnamon and (optional) sweetener.
  3. In a separate bowl, wisk eggs, pumpkin puree, applesauce, and vanilla.
  4. Add dry ingredients to wet ingredients and mix thoroughly until you have a thick batter. Fold in chocolate chips.
  5. Spoon cookies onto greased/sprayed standard cookie sheet. Create “piles” of batter; 6 on each sheet.
  6. Bake in oven at 350ºF for approximately 15 minutes.
  7. Let cool for 5 minutes then transfer to rack. Store in air tight container for up to 1 week, or freeze for a longer storage time! ENJOY!
